The history of herbs can be traced back a long way in the past. Even the Assyrians cooked with dill and thyme. The ancient Greeks even dedicated herbs to their gods. For example, the Aphrodite – goddess of love – have been attributed marjoram, rosemary and thyme. Evidence of the medicinal properties of herbs can also be found in the writings of Hippocrates. Charlemagne even ordered their cultivation in the gardens of his monastery, and the Benedictines brought new types of herbs from their ancestral monastery Monte Cassino from the Mediterranean to the areas north of the Alps.

But they are particularly in demand in the kitchen because the culinary art cannot do without them.
